CRAB MEAT FRITTERS

1 C Fresh crab meat
2 cups Flour
1 C milk
1 tbsp baking powder
2 eggs
1/2 tsp salt
1 tbsp melted butter
4 tbsps butter

Break crab into pieces. Sift flour, baking powder and salt into bowl. Break eggs into small bowl and beat until foamy, add to the Flour mixture blending well. Gradually add milk. When very smooth add melted butter and stir well. Batter will be thin. Add the crab meat and mix well. Melt the 4 tbsps butter in frying skillet. Heat to 375 degrees (hot but not smoking). Drop batter by spoonful into hot fat. Fry for 3 minutes until golden brown. Drain on paper towel. Serve plain or with cream sauce or favorite sauce.
