|1 lb fish fillets |
1/4 cup chopped bacon
1/4 chopped onion
|2 cups hot water |
1 cup diced potatoes
2 cups rich milk
|3/4 tsp salt Dash of pepper |
Cuts fillets in small bite size pieces. Fry bacon until crisp.
Add onions and brown slightly. Add water and potatoes, and simmer gently for 10 minutes, or until potatoes are partially cooked,
Add fish and cook until it can be flaked when tested with fork. pour in milk and seasoning,
heat but do not boil. Serve immediately.
Garnish with chopped fresh parsley and croutons.
Makes: Serves 6
