A rich and satisfying soup of mushrooms with clam accents.
Print
1 lb mushrooms
3 minced onions
1 tbsp butter
4 tbsp flour
4 cups clam juice
salt and pepper to taste
1/8 tsp nutmeg
1 1/2 cups light cream

slice mushrooms.set aside.
Saute the onion in butter until golden brown. Stir in flour,
mix well.
Add clam juice, 1 cup at a time. Stirring well after each addition.
Add salt, pepper, nutmeg.
Simmer uncovered for 5 minutes add cream and heat through.

Makes: Serves 6
