Print          
1 6 to 8 pound salmon
2 cups fine dry bread crumbs
1 cup finely grated raw carrots
1 cup finely chopped onion - sauteed in butter
1 cup chopped fresh mushrooms
1/2 cup chopped parsley
1 egg slightly beaten
1 1/2 tbsps lemon juice
1 clove garlic minced
2 tsps salt
1 1/4 tsp marjoram
1/4 tsp pepper

Mix all ingredients together, except salmon and pack lightly in
fish cavity. Wrap fish tightly in aluminium foil and place on baking
sheet. Bake in 350 degree oven, 15 minutes per pound of fish.

Makes: 6 to 8
