My version of these tasty breakfast cakes.

1 cup flour
1.5 cups buttermilk
1/4 tsp salt
1 tsp baking powder
1/2 tsp baking soda
2 tbsp sugar
1 large egg
2 tbsp unsalted butter
1 tsp vanilla

Whisk buttermilk, sugar, salt, vanilla, and beaten egg together in a medium mixing bowl. In a separate small bowl whisk the flour, baking soda, baking powder. Whisk the dry ingredients into the wet bowl. Whisk in the melted butter. Don't over whisk. Let stand for a few minutes to let the baking powder activate. Heat griddle to about 375. (you will need to play with this for your stove). Use a 1/4 cup scoop of batter for each cake. Cook until golden brown on each side. Only flip once.

Makes: about seven, six inch cakes

Steel-cut oatmeal is so substantial, with a fuller flavour and texture that makes quick-cook seem as if it's merely masquerading as oatmeal. When you eat steel-cut, you think, "Oh! So this is what oatmeal is supposed to taste like!"
