Steel-cut oatmeal is so substantial, with a fuller flavour and texture that makes quick-cook seem as if it's merely masquerading as oatmeal. When you eat steel-cut, you think, "Oh! So this is what oatmeal is supposed to taste like!"

This is the best baked bean recipe in the world. Restaurants would do well with this one. Once upon a time I had similar beans at Loves Wood Pit BBQ.

1/2 lb lean pork
1/2 lb salt pork
1 lb bag of navy beans
1/2 tsp pepper
1/2 tsp salt
1 diced onion
2 cloves minced garlic
1/3 cup molasses
1 cup brown sugar
1 cup ketchup
1 tbsp dry mustard
1 tbsp Worcestershire sauce
2 tablespoons vinegar
4 slices thick bacon (chopped)
3 teaspoons chilli powder
1/4 tsp liquid smoke

Inspect beans for debris and rocks. Soak beans overnight, Drain and rinse well.
Remove rind from salt pork if any. Dice lean and salt pork into 1/2" cubes.
Thouroughly score the pork rind. Combine all ingredients in a pot. Pour on
just enough water to cover beans.
Cooking methods:
1) Bring to boil then reduce heat and simmer at least one hour.
or
2) Cover and bake at 250 degrees for five hours.
or
3) Assemble in a crock pot and cook for 5 hours.
Cooking time determines how thick or wet the mix will be.
For the BBQ Pit version omit the bacon and liquid smoke. Course grind meat and
fat scraps. Spread over the top of the bean mix. Cook in bbq pit for four to
six hours until smoked to delicious perfection. Remove from the bbq pit and
mix the meat into the beans.

Makes: big pot full
