Light and Fluffy Belgian Waffles
Print          
1/4 oz pkg active dry yeast
3 eggs separated
3 cups lukewarm milk
3/4 cup butter lukewarm
1/2 cup white sugar
1 1/2 tsp salt
2 tsp vanilla extract
4 cups all-purpose flour

1. Dissolve yeast in 1/4 cup warm milk. Let stand about 10 minutes.

2. In a large bowl, whisk together the egg yolks, 1/4 cup of the warm milk and the melted butter. Stir in the yeast mixture, sugar, salt and vanilla. Stir in the remaining 2 1/2 cups milk alternately with the flour, ending with the flour. Beat the egg whites until they form soft peaks and then fold into the batter. Cover the bowl tightly with plastic wrap. Let rise in a warm place until doubled in volume, about 1 hour.

3. Preheat the waffle iron. Brush with oil. Put about 1/2 cup batter in the middle of the iron. Close the lid and bake until it stops steaming and the waffle is golden brown. Serve immediately or keep warm in 200 degree oven.

Makes: 8 waffles

Basically a fruit custard. A baked French dessert of black cherries arranged in a buttered dish and covered with a thick flan-like batter. Clafoutis is dusted with powdered sugar and served warm.

Steel-cut oatmeal is so substantial, with a fuller flavour and texture that makes quick-cook seem as if it's merely masquerading as oatmeal. When you eat steel-cut, you think, "Oh! So this is what oatmeal is supposed to taste like!"
