1 1/2 pounds fillet of sturgeon 1 tsp grated onion 2 eggs
| 8 small soda crackers rolled fine 1 tsp salt Dash of pepper
| 1 cup of milk

Grind sturgeon in meat grinder. Add onion, eggs and 1/2 cup milk, crackers, salt and pepper mixing thoroughly. Let stand one hour. Stir in 1/4 cup milk and let stand a while longer. Just before frying add 1/4 cup milk and stir thoroughly . Drop onto greased skillet (bacon fat suggested) with tablespoon. Brown nicely on both sides and be sure they are thoroughly cooked through. Serve immediately.
