2 lbs cleaned smelt 2 tbsp water 1/2 cup flour
| 1/2 cup dried bread crumbs 1/4 tsp pepper 1 tsp salt
| 1/2 cup salad oil 2 eggs 2 tbsps butter

Combine on wax paper, flour, pepper, salt. Beat together in shallow dish eggs and water. Coat fish individually in flour mixture, egg mixture then in crumbs. Dry on rack for 30 minutes. Heat in large skillet at medium temperature salad oil and butter. Fry fish a few at a time for 2 minutes per side or until flaky.
